Where the Farm Becomes the Menu

At Haven, the farm drives the menu.

The majority of produce we serve comes directly from Fox Point Farms, with crops like carrots, beets, fennel, cabbage, turnips, and leafy greens making their way from our fields into the kitchen throughout the year.

Our menus evolve with the seasons and the harvest, with larger shifts in summer and winter and smaller changes whenever something new comes into season—or inspires the next dish. Because we can let produce ripen in the field, harvest it, and have it on a plate within days, the ingredients arrive with a freshness, flavor, and connection to place that you can taste.

For us, farm-to-table isn’t simply about where an ingredient comes from. It’s about allowing the farm, the season, and the people who care for them to shape what we serve.

The Harvest Leads the Way

Chef Joel and Farmer Greg meet each week to walk the farm, look at what’s growing, review upcoming harvests, and imagine what’s possible in the kitchen.

Sometimes that collaboration starts with a wish list. Crops are occasionally planted specifically with Haven in mind—like the shishitos that make their way onto the menu each summer. But more often, the harvest gets the final word.

As Joel puts it,

“The farm drives the menu. I’m just here to ensure we stay on the road.”

That means a dish might begin with an abundance of fennel, a crop coming into season, or even an ingredient that might otherwise be overlooked. Beet greens become part of our seafood cavatelli. Fennel fronds become pesto. The possibilities change with the farm.

It’s a collaboration built around paying attention to what’s growing and finding delicious ways to share it.

Cooking What the Farm Gives Us

The most interesting ingredients don’t always arrive with a grand plan. Sometimes they’re simply what’s growing—and that’s where the creativity begins.

Our cabbage dish is a reflection of that approach. Green conical cabbage is halved, seared, and poached, while red cabbage is sliced and fried for texture. Farm-grown lemongrass is dehydrated and folded into a furikake with seaweed and sesame, while kaffir lime leaves become a gochujang aioli.

The cabbage takes center stage, surrounded by smaller ingredients from the farm that bring unexpected layers of flavor.

It’s a way of cooking that looks beyond the obvious and finds a place for more of what the farm produces.

Even the bread tells a story.

Our housemade focaccia incorporates vegetable waste from the kitchen, while our butters change with the seasons—from savory rosemary and garlic to sweet beet butter.
